Strawberry Cheesecake

This simple strawberry cheesecake recipe is a must-have dessert for the public!Creamy, creamy, topped with delicious strawberry sauce and homemade strawberry sauce, this is the perfect recipe for summer!

* Ingredients :

° 2 1/4 cups (302 g) graham crackers
° 3 tablespoons (39 g) sugar
° ½ cup (112 g) melted salted butter
° 24 oz (678 g) cream cheese, room temperature
° 1 cup (207 g) sugar
° 3 tsp (24 grams) allpurpose flour
° 3/4 cup (173 g) sour cream, room temperature
1 1/2 tsp vanilla extract
° 3 large eggs, room temperature

° 1 1/2 cups (310 g) sugar
° 2 tablespoons cornstarch
° 1 1/2 cups mashed strawberries (from about 1 pound of strawberries)
° 1/2 teaspoon vanilla extract
° 2 cups chopped strawberries
whipped cream
° 1/2 cup heavy whipping cream, cold
° 1/4 cup powdered sugar
° 1/2 teaspoon vanilla extract

* directions :

1. Preheat the oven to 325°F (163°C). Grease a 9×13 frying pan.
2.Blend crust ingredients in  bowl.Squeeze the mixture into the bottom of the prepared skillet.  
3. Baking crust about 10 min, then set apart to cool.
4. Reduc oven temperature 148°C.
5.In  bowl, mix cream cheese, sugar & flour on low speed to smooth.Be sure to use a low speed to reduce the amount of air added to the mixture, which can cause cracks.Scrape off the edges of the bowl. 
 6.Adding sour cream & vanilla extract on low-speed to smooth.  
7.Adding eggs one at time, stir slowly to smooth.Scrape the edges of the bowl as needed to make sure everything is evenly mixed.  
8. Pour mix to pan with the crust / spread evenly.
9. Baking cheesecake about 31 min .
10.Turning off oven & let cheesecake in the oven with the door closed for 21 minutes. 
 11.Break the oven door with the cheesecake inside within 15 minutes. This slow cool process aids prevent cheesecake from cracking.
12. Putting cheesecake in refrigerator to cool totally, 3-4 h .
13. To make a layer of strawberries, combine sugar and cornstarch in a large saucepan. Add strawberry puree.
14. Cook over medium heat, stirring constantly, until mixture thickens and boils for 15 to 20 minutes.
15. Boilling about 1 1/2 minutes, then removing from heat.
16. Add the vanilla extract and chopped strawberries and leave to cool for 15-20 minutes.
17. Pour the mixture over the cheesecake and leave to cool completely, 3-4 hours or overnight. You can serve the sauce immediately, but it will thicken when it cools.
18. To make the whipped cream, add everything to the bowl of a large stand mixer and beat on high speed until stiff peaks form. Serve slices of cheesecake with whipped cream, if desired.
